Eggs are one of the most popular ingredients in baking, with many dishes calling for egg whites or whole eggs. Of course, some recipes are purely based around eggs. For example, deviled eggs, egg salad, poached eggs, fried eggs, and so on. There are so many different ways to cook eggs, you could cook them a different way every day for a month.
Simple Deviled Eggs
Deviled eggs are a popular favorite. You can usually find these at all types of non-formal functions such as picnics, reunions, and family dinners. The great thing about deviled eggs is that they are really easy to make. All you need to do is boil the eggs, however many you wish to have, but remember each egg will make two deviled eggs.
After boiling, allow the eggs to cool, then peel them. Once peeled slice each egg in half, take the yolk and place it into a bowl. Once you have done this to all of your eggs, you set the egg whites to the side. Now it is time to mix the filling. There are a variety of different things you can use to make the filling, but most people use mayonnaise and mustard. Mix these together with the yolks and fill the egg whites with the mix and there you have it. If you would like, you can sprinkle the finished eggs with paprika.
You can add almost anything to the egg yolk mix; I like adding a couple of teaspoons of Lighthouse chunky Blu Cheese and bacon bits.
Basic Egg Salad
Egg salad is another popular favorite for many people. This is generally served during the summer at potlucks and picnics. To make egg salad, you boil your eggs. Allow the eggs to cool, then peel them and slice them as you would with deviled eggs. However, the biggest difference is that you do not need to cut them in half, instead dice the eggs.
Once you have diced all the eggs, mix everything with mayonnaise and mustard. Some people like to add pickle relish or pickle juice to their mix to add flavor. Of course, you can always salt and pepper to taste as well. I like adding diced purple (red) onions to my egg salad and like with the deviled eggs, bacon bits.
Other dishes that call for eggs includes different types of potato salads, most any baking dish such as cakes, cookies, and the like. Chefs salads use sliced eggs, and you can find sliced or diced eggs at most salad bars.
When Are Boiled Eggs Done?
If you are like many, you have troubles knowing when the eggs are boiled. One of the best ways to tell when they are ready to be taken out of the boiling water is that the eggs will tend to “float”. If you start to see cracks in the eggs or part of the yolk coming out of the egg, they have been boiled too long.
